Natural vanilla is extracted from vanilla pods, an orchid vine plant whose fruit is slender pea-shaped, about 15-20cm long. It was discovered and widely used by Mexicans before the 16th century.
Known for its extremely long production cycle, vanilla takes 30 months from planting to flowering, and another 8-10 months from flowering to pod maturity. The flowering period is only 4-6 hours, and a high degree of human participation is required to complete pollination during the flowering period.
